De Cecco Orecchiette (small ears), also known as "strascicati", is a typical pasta shape from the culinary tradition of Apulia. Its shape is a round disc with a slight indentation in the middle. In Apulia's traditional cuisine, orecchiette are cooked in boiling water with broccoli or potatoes and served with a tomato sauce and sheep's cheese, or with garlic and oil.
