The most typical sauce with this format is the lamb sauce. In certain regions of Abruzzo, the traditional sauce for De Cecco Maccheroni alla Chitarra is a tomato sauce enriched with veal meatballs about an inch in diameter, called "pallottelle". Maccheroni alla Chitarra is also excellent with various meat sauces, with tomato and aubergine sauces, or with fish.
